why is the sky blue?

Since there is water (lots of it) and it evaporates at high tempuratures, the water over Africa and the Middle East has generally evaporated. When it evaporates, the water turns into its gaseous (sp?) state, and disperses like any other gas would under the conditions. Anyways, it spreads throughout the air, and when it cools, it forms tiny water droplets (not huge clouds, but tiny, microscopic droplets). When the light from the sun reflects off of these droplets, we see blue, because it is water vapor, and since it's evenly distributed throughout the atmosphere, the sky is blue.
