You have to go to Six Flags Magic Mountain! People say it's the worst SF park but I've been twice and it was amazing. One of the best sets of coasters at any park.
Knott's Berry Farm is another park with a bad reputation but I had a brilliant time there. Xcelerator is fantastic.
Then there's Universal Studios which is well worth a visit. Rides and all the film-themed things like the studio tour.
People recommend Disneyland but I gave that one a miss. Depends if you put more emphasis on rides or theming. But having been to the Florida Disney World I decided SFMM and Knott's were more my cup of tea.
All these parks are around LA which itself is worth visiting. -

Are you going to Northern California or Southern? Or all over the state? If you're going Southern, Xophe listed some great parks to go to. If you're going to Northern California I suggest going to: California's Great America in Santa Clara, Six Flags Discovery Kingdom in Vallejo(near San Francisco), and the Santa Beach Boardwalk in Santa Cruz CA. There is also a park in Gilroy, CA called Gilroy Gardens. You can check out all the parks from the following links.

All of these are great parks, especially Six Flags Discovery Kingdom. Great coasters, animals, shows, and lots more. Great America has a sister park named Great America in Illinois. This one has a wide variety of roller coasters, water rides, and flat rides. One of my favorite parks is the Santa Cruz Beach Boardwalk, which includes an 85 year old wooden coaster, 99 year old Carousel, plus a casino with an arcade, minigolf and lasertag all along with dozens of other new and older rides. All this and more can be found on this 103 year old park! Gilroy Gardens is mainly a park with gardens with many rides. The park is known for it's circus trees(see website) and many plants. The park is very beautiful, but if you're looking for thrill rides, don't go here! Check out the site for more on that one.
Good luck, and have fun in California!

Go to Six Flags Magic Mountain! The coasters are incredible there (if they are all operating). -
