Ugh...there are so many publishers I can't count...but I'd say EA out of those three.
As for developers, I like The Behemoth. -

Insomniac? Or are they something else?
Ratchet & Clank and Spyro the Dragon.
I love those games too. Too bad they sold out Spyro and since it went to another developer it killed the PS2 version. It was the first console game I've seen that lagged and was so extremely buggy.
Just hope they won't do the same with Ratchet & Clank.

I'd say Microprose but they're not around anymore. Lucasarts were another faviorate of mine. Oh, and Bullfrog.
Now-a-days the developers are re-inventing the wheel, but with shinier spokes. The only titles which have wowed me are (lol @ the pun) WOW and GTA. Everything else just seems so been there done that. The two games mentioned were ground braking in terms of size and content, but the other titles released by the developers behind both them games are pretty generic.
Actually, I will give Blizzard lots of credit because there is a MASSIVE background to the warcraft universe.
Microprose fucking pwned though, although I think they were just publishers.
