I think the castle front is excellent (bar the pink and blue tower maybe... it's standing out too much in my opinion) And the large amounts of path don't bother me. If anything, I suppose it's allowing us to see the hedges and planters unobstructed by other large buildings that would flank the paths.
I'm designing the park like a real Disney park which are designed to handle large crowds. Even today, Disney is modifying decades old walkways to accomodate crowds that designers wouldn't have dreamed of back when they were laying out the parks. I figure my Fantasyland should have a large, clear thoroughfare for guests to easily travel from one end of the land to another. It may look a bit much compared to normal RCT2 parks, but it works well with my larger scale and makes operational sense.
the planters infront of Snow White don't seem "Disney" to me.. I think flowers and bushes would work in those planters.. Everything else though is Disney. The colors and how you have the queue is spot on.
I know you have to cut on objects used, but without underbrush the pines don't look good. Since the building doesn't have much colour or contrast, I'd swap some of the pines for flowers.
