I really like the structures and the part of the coaster that doesn't awkwardly stand out over the path and the water. As RWE said, the foliage needs a lot of love and there is quite a lot of white on the buildings.
Scenic railways do not have banked turns. Not to mention the side-friction coaster cars do not have banked turn sprites. Also, everyone is saying the layout sucks, but not why. I am not very experienced, so would you guys please help me out here?
Well, the coaster is too big and long for a scenic railway, and IMO side-friction trains don't look too good on wooden coaster track. Take a look at real-life smaller scenic railways, and maybe some examples from RCT.
Also, I echo everything said above about architecture and foliage.
You will have to explain what you mean by "smaller scenic railways" because Montaña Suiza is the smallest I know of, and it isn't terribly small either.
As far as the over-water portion goes, this fort has been added:
The updated screen looks much better. I like the idea of a scenic railway! Though the layout seems a little too randomly spread out to look perfectly realistic. Architecture is simple but nicely done, not so sure about the landscape though. It's good that you ditched the foliage in the first screen, but the bare rock is pretty boring... Not so sure what to do about it though, try adding some weeds at least!
The coaster looks really weird, foliage is bad, rest looks okay, maybe a bit too much white in the archy!

Use banked turns. And revisit that layout for the coaster, it's bad. Architecture, however, is pretty good.

It might look a bit nicer if you expanded the map borders and were able to give it a bit more room, and not build up against the edge of the map.
I agree. Unfortunately the contest I am making this for prohibits changing the park border and anything outside.
I mean, the scale kinda doesn't look that good when made in RCT, but maybe this is an unpopular opinion.
Wait is this for the reddit contest?
Edit: don't worry I won't finish anything
Somewhat off-topic and unimportant, but the correct Spanish is "el gato loco"
I actually quite like the railway, although it is kinda weird at first because it uses wooden coaster track.
