It ain't a bad start, a few things that will help you
For the waterfall, you need more rapids and white water, its too big a waterfall to have such little affect on the water. For the landscaping, its seems a big random, take a look at some of the foliage on the site, clumps are your friend, and thuck, luch stuff. If this isn't supposed to be as lush, at least get some bushes, bits of grass, something other than just trees. The rocks don't make much sense, they are too random and some are just floating on the water. If you want rocky rapids, you should lower the water and build them underneath, then raise the water around it. Rocks also look better clumped and in patches.
Be careful about floating trees, some of them on the hill seem to be above the ground. Map Object Manipulator can lower them so they touch.
And I would make all the water in between the two waterfall sections white water. but it looks like a good waterfall and it's cool to see you improving in a few hours.
It's looking a lot better now, follow their suggestions and it'll be even better.
My only suggestion is to raise a corner of the land where the tall grasses are and the water forms a perfect 90 degree angle. I don't thin I've ever seen a perfect 90 degree angle on the edge of a stream in nature so I try to avoid it in RCT.
Old trick: change the vertical land behind the waterfall to ice. Trust me, it'll look better.
Another thing to consider: the rock walls you have are nice, but they look artificial because they're not anywhere else in the landscape. It would help if you had more jagged rocks in the area. Doesn't have to be everywhere, but just a few places were the land is rougher.
Waterfall and surrounding lanscape. I'm trying to focus on landscape and park interactions with the landscape. Any suggestions would be much appreciated.

Also, your rapids are too bright. Use the dark teal color.

Now when have you seen a waterfall that flat in real life? Consider making it a bit more curvy/not flat.

Is this any better? Or is this too much?

Now put some rocks in to explain why the water level is different at different parts and it'll be solid.
