Generally these 'desert' buildings have quite flat roofs so you need to focus more on texture [which you have done to some extent to be fair]. It might be worth adding some sort of trim on the corners, or using the wooden pole object [that has two short wood poles next to each other] near the roof.
I don't get the theme either and I don't like the fact that every building and wall and object (foliagen, supports, rocks) has the same colour. There are other colours in RCT you know, try them!
its supposed to be an egyptian ruin. If I'm correct busch gardens doesn't have many color changes in their montu section of the park, and that is where I am getting inspiration from.
The buildings look way too organised to be ruins, they're perfect blocks and even if the ancient egyptian architecture was very geometrical it's nothing like this... Try some scattered piles of debris, or at least some form of crumbling buildings instead of a box without a roof, also judging from the screen the coaster layout doesn't have a lot of flow or at least a purpose why a certain element is placed where it is... the coaster actually looks like an afterthought here.

There's no way I can tell this is supposed to be egyptian ruins. If I had to guess I'd rather say this is some sort of factory in the American desert. You did zero research.
This reminds me of something very Southwestern and Spanish, so I would try looking at some of the Spanish Mission Churches for inspiration. I think it looks very good and i don't see any "theme issues" like a lot of people are saying. I think a red or blue dome would look great covering the round building, and making the place on the right here the coaster goes underground more ruin-y would look cool. Kind of going off of the idea the the coaster just smashed through the building.
overall, I think this is some really good stuff going on, and I don't believe that is necessary to add more color because in the desert Southwest (where I live) every single fucking thing is beige/brown/tan and the "color" comes with the roofing.
I wouldn't call it "backlash". They were trying to give their criticisms (which is the point of showing screenshots), and it's not always going to be "I love this" or "fantastic".

It doesn't scream Egyptian ruin to me. The windows and walls are way to clean and straight. Also those black big windows aren't Egyptian at all.
